Viticulture

The average age of the vines is 35 years. Pruning is done to 8 buds for old vines and 6 for young ones. Depending on the needs of each plot, green harvesting and leaf thinning were carried out.
The harvest is manual and with sorting. It lasted from September 18 to October 5, 2024.
The yield is 32.76 hl/ha.

Vinification

The wine is vinified in thermoregulated wooden vats and for better integration of the tannins and the woody aromatic profile, malolactic fermentation takes place in barrels.

Aging

The wine is aged in 72% new French oak barrels, and 28% barrels of one wine.

Détails chateau PAVIE

History and anecdotes

In 1998, Gerard Perse acquired Château Pavie. Major investments began in the Château in order to give its reputation back. Michel Rolland acted as consulting oenologist and the architect Alberto Pinto redesigned the estate. In 2012, the excellence of Château Pavie became well-known thanks to its promotion and “A” classification as Premier Grand Cru in the Saint-Emilion appellation.

Since antiquity, the estate has been well-known for its fruit production, especially the Pavie peaches. The Château was named after them.
