Vinification

The harvest is done manually. Sorting is very meticulous, and the grape berries are vinified parcel by parcel in wooden barrels. The extraction is gentle using gravity racking.

Aging

Chateau Ausone 2023 will be aged in new oak barrels for 20 months.

Détails chateau CHAPELLE D'AUSONE

History and anecdotes Chapelle d'Ausone is the second wine of Château Ausone, located in Saint-Emilion, Grand Cru. Château Ausone has been owned by the Vauthier family since the late 1990s. The history of the estate is very old, dating back to the 13th century, with only five families having managed the estate over the years. Château Ausone takes its name from an iconic figure of Roman antiquity, Decimus Magnus Ausonius, a political advisor and professor.
