Medium to full-bodied, layered, and concentrated, with a rich tannic framework, it has a vibrant core of fruit and a long mineral finish infused with vanillin. Vinification

The harvest is done manually. Sorting is very meticulous, and the grape berries are vinified parcel by parcel in wooden barrels. The extraction is gentle using gravity racking. 

Aging

Chateau Ausone 2023 will be aged in new oak barrels for 20 months.

« I don't think I've tasted an Ausone like this. The purity of the fruit and the fluidity are so primary, like perfectly picked grapes with their juice. Then, there is a citrus freshness. It's muscular, with tonic tannins that caress the palate and give a harmonious finish. This could really push the boundaries of Ausone's character, in terms of finesse with structure. Keep an eye on it. 60% Cabernet Franc and 40% Merlot. » - James Suckling

History and anecdotes

Château Ausone located in Saint-Emilion Grand Cru, is owned by the Vauthier family since the late 1990s. The history of the estate is very old, it goes back to the 13th century and only 5 families succeeded each other in the management of the estate.

Chateau Ausone takes its name from an iconic figure of Roman antiquity, Decimus Magnus Ausonius, political advisor and professor.
